Recipe: Falafel bowl

It’s recipe time again. This time we will share one of our own favourite go to dinners for weekdays. It’s so easy to just order in or take out, and when we do so a falafel pita is one we never say no to. But we also like our own version of it, and make it just that much healthier (as a bonus, it’s vegan!). That’s why we turn it into a jummie bowl of goodness that you can easily eat on the couch while watching your current favourite Netflix series. __What you’ll need for two:__ - 2 big handfuls of spinach - Half a cucumber - 2 tomatoes - 1 Avocado - Hummus - Falafel (the maza spicy falafel is our favourite) - Coriander leaves - Sunflower seeds __Let’s get cooking:__ Start by dividing the spinach over two bowls. Then chop up the cucumber, tomato and avocado and sprinkle it over the spinach. Next place a pan over medium to high heat and cook your falafel until golden brown and warmed through. Put it on top of the salad in your bowl. Top of with a nice spoonful of hummus in the middle and finish it off with a sprinkle of coriander leaves and sunflower seeds. P.s. if you love spiciness as much as we do, dress it with an extra drizzle of your favourite hot sauce. P.p.s In winter when you just want that little extra kick to warm you up, we like to add oven roasted pumpkin and chickpeas.
