Healthy power bars

Sometimes after your workout or in the afternoon you just need something to give you the final energy boost to get through. We always like a nice snack to tide us over to lunch or dinner.

This is our favorite energy bar recipe which is both healthy and delicious.

What you’ll need for 8 bars:

3 medjool dates

5 tablespoons peanut butter

3 tablespoons agave syrup

100 grams puffed rice (AH)

2 tablespoons chia seeds

60 grams extra dark chocolate

How to make it:

Soak the dates in hot water for a few minutes. Blend it up together with 3 tablespoons of peanut butter and the agave syrup. Stir through the puffed rice and chia seeds. Take an oven dish lined with parchment paper. Put in the puffed rice mixture and press into the oven dish firmly. Put in the fridge to set. At the same time melt the chocolate with the remaining 2 tablespoons of peanut butter. Take the oven dish out of the fridge and spread the chocolate mixture on top. Put back in the fridge until it’s set completely. Slice into squares or bars and eat whenever you need a little pick-me-up.
